No Bake Honey, Coconut

and Fruit Health Bars


Ingredients:

200g butter

180g dark brown sugar

100g honey

50g dried cranberries

100g sultanas

50g coconut

100g crisped rice cereal

150g rolled oats


Method:

  1. Line a traybake with cling film.
  2. Add the butter, sugar and honey to a large saucepan. Stir gently until melted. Pour into a large bowl, stir in all the remaining ingredients until well combined.
  3. Put the mixture into the prepared tin and spread with the back of a spoon, pressing firmly into an even layer. Transfer to the fridge to chill uncovered, for about 2 hours or until firm.
  4. Cut into even sized bars. Store in an airtight container. Freezes well.
